Abstract The objectives of the study are: • to examine the restructuring of the Indian dairy industry paying particular attention to the national patterns in processing, wholesale, and retail change • to study milk procurement system choices of local dairy processors and dairy farmer choices between traditional unorganized and restructured dairy channels, and changes in the structure of the local dairy sector within the context of more broadly restructuring the dairy sector • to identify important technological, managerial, and organizational practices which influence the market channel choices of farmers • to study interactions between the market and production practice behaviour of dairy producers and local dairy industry segments on the one hand, and effects of restructuring on rural labour markets on the other.
